Healthy Fun Kid Snacks

Snacks have come a long way from when I was a child.  The only processed snack time treat I was ever allowed was the occasional bowl of gold fish crackers.  Otherwise, it was fresh fruit, nuts, sometime I baked, or nothin'.   Now children (and adults) are fed a fast-food, quick snack diet of processed carbohydrates and sugars.

After ridding our home of sweets and junk several years ago, I found myself searching for a healthy alternative for snacks.  Here are several of our healthy, in-between meals, stomach fillers:

Dried fruits and nuts.  Easy and simple.  We usually purchase many pounds of "non-store shelf quality" organic apples and spend days drying and canning them.  So, I usually have plenty of dried apples on hand!  The fruits and nuts store very well through the winter months.  A great staple to have on hand, especially if you find a great deal on fresh apples and want to stock up!


Pretzels and mustard.  I have no idea how this tradition started, but all of my children love the combination of pretzels dipped in mustard.  By the way, pretzels are fun and fairly easy to make!

Fruit Salad.  We usually make a quick fruit salad when we have a few fruits on hand that are nearing the end of their freshness stage.  It also comes in handy when you have odds and ends of your fruits left over.  Try dividing 13 grapes up among 9 children...

Frozen Grapes.  Speaking of grapes.......again, if you run into a great organic deal, you can freeze extra grapes to eat later.  My children love them right out of the freezer.  A nice treat for a hot day!

Fruit Kabobs. Way fun and easy for little ones to assemble.  You can even make a learning game out of it and gather several fruits related to the various colors of the rainbow.

Pita Chips and Mango Salsa.  One of my favorites.  It's refreshing, sweet, and I promise to post my recipe.  Soon.  Promise...

Fruit and Yogurt.  Make a dip out of your yogurt, or mix a bowl of berries and yogurt as the dressing.  Yum!

Peanut Butter and Apples.  A classic.  You can't go wrong.

Ants on a Log.  One of my girls' favorite treats to make for the littles.  You fill a piece of celery with cream cheese or peanut butter, and then place raisins on top.  Just like ants on a log.  ;)


Homemade Cheese Crackers.  I actually made little cheese crackers.  The twins helped me cut them out and bake them.  It was work, but not any more than one would go through to made sugar cookies.  I made a large batch, and then we cut out tiny little square and circle shapes.  About 2" in width and diameter.  Turned out pretty good, and they stored better than I expected.  You could probably freeze them if necessary, but they didn't last long around here.

Bread, Butter, and Jam.  On bread making day, my children come from all corners of the house and just sit in the kitchen.  Some will actually go find the butter and jam in order to prepare for the hot-from-the-oven slices.  Of course, this isn't the best healthy snack, but I baked the bread, we made the organic butter, and cooked up the homemade jam.  Makes me feel a little better...

Trail Mix.  I keep a jar of mixed nuts, dried fruit, and sunflower seeds in the pantry.  It's also an easy grab for when we are heading out of the house and need a quick, take-along snack.

Organic Cereal O's.  While my little ones are still pretty small, the organic O cereals are easy for their little fingers and soften up quickly.  My favorite are the Fruitful O's from Cascadian Farm Organic.  The O's are colored with elderberry juice, pumpkin juice, and apple juice.

Granola.  I make granola, for cereal, but the children enjoy throwing some in a bowl and snacking on it.

Granola Bars.  There are many organic companies that make granola bars.  They can be expensive, so we save them for car trips, or special park days.

Cheese and crackers.  Pretty simple.  And no, not Ritz and squeeze cheese.  Gross.

Popcorn.  We buy organic colored popcorn in bulk.  To be exact, 25 pounds at a time.  My husband has several popcorn concoctions that are really good!  Another promised recipe to share.  

Home-baked cookies.  Again, not the most healthy, but we do make all of our baked goods from whole grains, and all-natural, organic ingredients.  It's nice to have a warm cookie and a glass of raw jersey milk as a treat. 

Fruit.  Just plain ol' fruit.  Many times, in the afternoon, when my children head out to play, they rarely ask for a snack.  In all seriousness, I will find them snacking on green beans and cherry tomatoes right from the garden.  You can't ask for a more healthy snack!  Right now, the citrus trees are ripe, and I have found orange peels scattered on the ground outside.  Thank the Lord for a good harvest.


Fruit Smoothies.  Another idea for frozen and over-ripe fruit.  Add a banana, some frozen berries, a little apple juice, maybe some ice, and you have a nice, filling, healthy snack.

Carrots, Celery, and Dressing.  My husband makes dressings that are to die for.  All natural, organic, and made from yogurt and homemade mayo.  We keep a container of cut up celery and carrots in our refrigerator most of the time.  It's easy to snack on, with or without the dressing!

Let Go and Let God

I follow many blogs.  Most are about homeschooling, homemaking, large families, or natural living.  It's easy to get caught up in what advice is the perfect formula for raising children, organizing your homeschool room, meal planning, or preparedness living.  So many ideas, so much advice, all wonderful and spot on, but at the same time, overwhelming.

Sometimes I find myself wishing I had all the answers.  Then I'd organize them into yet another black binder...

If I follow this person's advice, I'll have a great relationship with my husband.  If I follow this other person's advice, I'll have a best friend of my daughters.  If I follow another person's advice, I'll incorporate the perfect curriculum.  If I follow yet another person's advice, I'll be able to survive the apocalypse.  Maybe not so much on the latter, but you get the idea. 

It's very easy for us to find people we admire, take all of their advice, store it in our brain, and then get overwhelmed, hoping we get it right, do it right, say it right, so that the formula will come out right in the end.  We can't handle all of the information, much less put it to use!  Does X + Y really = Z?!  I need the right answers!

This morning was a processing day for me, apparently.  Feeling overwhelmed and like a failure, I made my way out to the garden, the only place to be alone and quiet, and cried out to the Lord.  I want to be a good wife, mother, friend to my children, and at the same time take care of all that you've blessed me with!  I can't do it all!  I can't guarantee that all of my efforts will be worth it!  I have no other option but to give it to you, Lord, all of it, every bit of it!  I cannot do it on my own, without Your guidance and wisdom, I am sunk.

Then came peace.  Give it to the Lord.  Do all I can, with what little knowledge, talent, and wisdom I have, and let God do the rest. 

I can't create the perfect family or perfect life, mostly because I am an imperfect mother, raising imperfect children, and married to an imperfect man.  It will never work.  However, I can do my best to raise my children up in "the nurture and admonition of the Lord."  (Eph 6:4), to be a godly wife, and to keep up with the home and land the Lord has entrusted me with.

And leave the rest to God.

"As for God, his way is perfect; the word of the LORD is tried: he is a buckler to all them that trust in him. God is my strength and power: and he maketh my way perfect."  2 Samuel 22:31 & 33

Modest Leggings

If you have toddlers and young daughters, you might find the need for undergarments to help with modesty.  Bloomers are adorable when they're babies, but at some point, they outgrow the bloomer stage and need something a little more "grown-up" to help keep them covered.

I have the perfect pattern for making leggings.

Knit Leggings

This is an e-pattern, but it's super simple, perfect for a beginner!  The pattern has one piece, from which you cut two pieces of fabric for your leggings.  The instructions include varying lengths of pant.  You can make them short, or ankle length, or some length in between!

They're just what I need for under the twin's dresses!

Brace Face

Child #2 on her way to straighter teeth.  She was anxious and ready to get started, especially after seeing big sister's success with braces.  Hopefully she'll appreciate the fabric addiction and yards of quilter's cotton I've given up for the next two years, so she can have a straight smile.


It's worth it for this beautiful young lady.  :)

A Meek and Quiet Spirit

One of my many struggles.........a meek and quiet spirit.  Neither, of which, comes naturally......obviously.

In my daily quiet time, I've prayed, begged, prayed more, and bartered with the Lord to just GIVE me a meek and quiet spirit.  You know, I don't want to have to work at it or anything.....but all things earned are definitely much more appreciated.  About a year ago, I realized I was too frazzled, too impatient, too frustrated, and too angry.  Why did it take so long to figure that out?  I dunno.  I'm a slow learner.  However, I have learned and grown in my quietness (some) and I recently read the book Homeschooling with a Meek and Quiet Spirit by Teri Maxwell, which happened to find me at the appropriate time.  Funny how the Lord arranges those sorts of meetings...

In every character building stage of our lives, there will always be challenges that bring about temptation and may or may not cause us to fail.  Or at least take a couple of steps back.  Tonight was one of those times...

Dinner time.  Mom is trying to get everything on the table.  At the same time trying to get everyONE to the table.  Dad is late.  One child is loudly singing a hymn.  Another child is loudly humming a different hymn.  Yet another child is whistling an unidentified piece of music.  A three-year-old is banging a fork on the table.  An eleven-month-old is crying.  A lively daughter is doing pirouettes around her chair.  Another three-year-old is whining.  And the pouring rain in the background, for once, isn't soothing.

You want to know how I handled it all?  I did what every stressed-out dinner-time mom would have done.  I yelled.  "WILL EVERYONE PLEASE BE QUIET!!!!!!"  "For crying out loud, can we all just come to the table, sit down, and be STILL AND QUIET?!!!!!!"

For that one moment, all my hard work in meekness, or quietness........is just gone.  I would love to tell you that this sort of thing rarely happens, but I'd be lying.  It happens all too often.  It did get quiet though....

The difference is, when I respond to my children with wrath and frustration, they become scared or frustrated themselves.  When I respond in quietness and gentleness, and with a smile on my face, they respond in like manner.  No one was doing anything wrong.  Except maybe the whining.  I'll never be able to handle that!  But no one was being disobedient or sinful, they were merely being themselves, joyful, happy children, and I burst the joyful bubble.  The atmosphere at the dinner table was completely different from what it was just a few moments before my outburst.

It's amazing how one little temper tantrum, or angry fit from a parent, can rob the room of joy.  Thankfully, my children recover quickly, and thankfully, they always are ready and willing to accept my apologies.

"But the meek shall inherit the earth; and shall delight themselves in the abundance of peace."  Psalm 37:11

Maybe I don't want the whole earth, but I do want my children's hearts.  And an abundance of peace.  :)

Boys


Grandpa Findley had a saying, "Send one boy to do a job, and it'll get done.  Send two boys to do a job, and it'll get half done.  Send three boys to do a job, and nothin' will get done at all."


Well, I'm pretty sure he's right.  Kiley asked the boys to clean up the side yard today, and this is what I found.  I'm sure it doesn't help that they're four months apart.  Kind of like slow twins.  Of course, I don't know anything about that...

Sorry for the lighting, I had to catch them while I could.  And no, I didn't ask them to pose.  Crazy boys.


And this is my angel baby boy.  He'll NEVER give me any trouble when he's their age.  ;)

Tea Time

Each afternoon (OK, almost each afternoon) around 3, my older girls and I meet up in the kitchen for a tea time.  Over tea, and whatever delicious treat the girls have cooked up that day, we usually spend about half an hour reading and discussing our current "devotional" Beautiful Girlhood by Mabel Hale and Karen Andreola.  Our mother/daughter time together has been such a blessing for me, and I pray that it's time well spent.  I truly enjoy getting to know my daughter's hearts, and I am so thankful for the opportunity to be instrumental in training them to be godly young ladies.  

Oh yes, and here is our usual tea time centerpiece...

The Twins 2.0 at 8 Months


Today marks 8 months  for the twins.  It amazes me how quickly time passes and with each child it seems to fly faster and faster.  I have intentionally spent more time with every baby so as to fit every available moment into enjoying their little lives, and yet, somehow they still seem to grow and change all too rapidly.

OK, enough of the sad stuff.......

Devon and Grant, affectionately known as Peanut and Bubba Chubs, are crawling, pulling up, walking along the couch, eating some solids, babbling, giving kisses, and stealing the hearts of all of their older siblings.  What precious reminders of the Lord's blessings!  Happy 8 months to my twinfants!

This pattern has to be one of my favorites! I love how simple it is, yet so girly and feminine. I have made the twins a couple of dresses, and  a nightgown for each. Quite a versatile pattern and it is SUPER easy to make!  The only thing I changed on it was the ruffle.  In the instructions, you are supposed to fold the ruffle in half, long ways, and then sew to the bottom of the dress.  I didn't fold it in half, but left it wider, which gave the dress a long ruffle and lengthened it all around.  OK, back to sewing......!

Afternoon Tea

As a result of watching too many BBC movies, my children have decided we need to have afternoon tea every day.  I will say that it is nice to take the time to sit, relax, and chat together while drinking our tea and having whatever snack Bailey has whipped up.  I have truly enjoyed it.  Even the twins have fun!

Happy Valentine's Day!!!

Sixteen years ago on this very day, my dear, sweet, wonderful husband proposed to me on the beach in Galveston.  I cannot imagine my life any other way.  I am so thankful for this man that the Lord brought into my life and for the many blessings He's blessed us with.  For a husband that works hard to provide for our family, for the relationship he and I have, for the gift of our children, and for our happy life.  I am thanking the Lord for his many wonderful blessings!  Happy Valentine's Day!

Kendall's Boots

Actually they were Bailey's boots from when she was little.  Kendall has been wearing these boots for the last three or four months.  She literally wore the soles off, and Kiley had to re-glue them together again!  Anyway, when she puts them on, she never takes them off.  She eats in them, plays in them, and would sleep in them if we'd let her.  I guess I'll have to be on the lookout for a pair of black boots in the next few sizes up!

Return of the Hulk

I got my wheels back!!!  After three plus weeks of the Hulk being out of commission and in the shop, he has finally returned to the asphalt driveway he knows as home.  It's great to see the big green machine out protecting our territory once again.

Right after we brought it home, the kids asked if they could give it a hug, lol!

A New Life!

I got to hold a sweet, newborn baby today! Just a few hours fresh. :) Little Luke, an added blessing to a loving family whom the Lord has chosen to bear many godly sons. I am so thankful for this family, willing to raise up strong men (and one little lady), for the Lord's glory! I pray the Lord's blessings for this precious family.

Happy 9 Months!

My babies are 9 months old today. It's somewhat bittersweet. :( They are very active, crawling, chatty, pulling up and walking along the edge of things. Kendall has tried a couple of steps, but falls and looks stunned as if she can't figure out how she wasn't able to just take off. lol. Kelsey is our hyper, verbal one and lets everyone know where she is and what she wants!

It's amazing to me how they can be twins and so very different in their personalities. It's been fun watching them grow and learn and to see how much they change their first year! What a blessing they have been to our family.
